  • 1 small onion, diced
  • 2 carrots, diced

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery until tender (about 5–6 minutes).
  2. Add garlic, oregano, salt, and pepper. Cook for 1 minute.
  3. Pour in broth and bring to a boil. Stir in orzo and cook for 8–10 minutes.
  4. Add shredded chicken and spinach. Cook for 2–3 minutes until wilted.
  5. Remove from heat and stir in lemon juice. If using an egg, slowly whisk it into the soup for a velvety finish.
